Zupas "Summer Salad" Recipe
I love this salad from Zupas! So So So Yummy. I went online to try and find a copy-cat recipe. Nothing really tasted 100% correct, but with a little experimentation....I think I got it! I have the recipe for the salad and the dressing below. You have got to try this!
(recipe serves 4, just half all of the ingredients if there are only 2 of you)

For the Salad:
- 1 head romaine lettuce, chopped
- 1 head of red leaf lettuce, chopped
- 10 red grapes, rinsed
- crasins (dried cranberries)
- 5-6 strawberries, sliced
- 1/4 cup of cashews, chopped (I put mine in a food processor)
- 1 cup cooked Chicken, diced (I used one breast and grilled, but could be done ahead of time and served cold)
For the Dressing:
- 5-6 ripe strawberries, diced
- 3/4 cup red wine vinegar
- 3/4 cup canola oil
- 1/2 cup sugar
- 1/2 tsp salt
- water (to add in at the end if too strong)
1. In a medium sized container mix the strawberries, salt, sugar, and vinegar. Blend well in a blender. While blending slowly add in all of the oil, blending until smooth.
Just put the salad together, drizzle the dressing and enjoy! (the cashews go on top)
