Black Bean and Tortilla Bake
This was pretty tasty! We threw it together on a Sunday in 10 minutes, and just let it bake. Yum Yum.
What you need:
2 cans - black beans (rinsed and drained)
2 cans - diced tomatoes (not not drained)
2 tsp ground cumin
1/2 cup chopped green onion
1/2 cup diced yellow onions
1/2 tsp chili powder
2-3 cups shredded cheese
12 soft corn tortillas (they are the little ones, like one dollar for 12)
salsa
1 can corn (optional)
What you do
1. Preheat oven to 350 degrees
2. Take a casserole dish, normal 9x13 size and layer the bottom or it with salsa.1. Preheat oven to 350 degrees
3. meanwhile, take the green onion, yellow onion, cumin, chili powder, and 2 cans of salsa and combine in a big skillet. Cook on medium heat until onions are soft.
4. Stir in the 2 cans of BBeans that are rinsed and drained. Add the one can of corn, if desired.
5. Layer corn tortillas on top of the salsa in the casserole dish.
6. Spoon on the "filling" mixture you have just created on top of the tortillas, after sprinkle with cheese! The Amount of cheese is up to you.
7. Layer more tortillas....and them more filling. This happens about 3 times.
8. Bake for 20 minutes at 350 COVERED
9. Uncover and bake another 10 minutes
Serve with Sour Cream, Quac, Salsa, etc.
