Tzatziki Chicken Salad Sandwiches
I love love Chicken Salad Sandwiches. However, I hate mayo and miracle whip. This yogurt based, greek substitute is the best! A different spin on chicken salad. Leftovers keep for about 2-3 days. I eat on a croissant.
- 1 c cooked chicken breast, shredded or chopped
- 1/2 cucumber
- 1/2 red onion
- 1/2 cup Tzatziki Sauce (more or less, combine until texture desired is achieved)
- Juice of 1/2 lemon
- Couple dashes ground black pepper
- Bread or Croissant, this is a sandwich
- Lettuce (optional)
Chop all veggies into 1/2" pieces and place in a medium bowl. Add chicken, tzatziki, lemon juice, and pepper, and mix together until everything is uniformly coated. Spoon onto bread and top with lettuce. Enjoy!!
