Cooked Vegetables in the CrockPot

Today is Sunday. On Sunday's we always make something in the CrockPot. 
I made roast. However, I hate how the vegetables are made with the roast and end up tasting like meat. Lucky for me, we have 2 crockpots!! Therefore, I decided to make the vegetables separately and they turned out delicious!!
What you need:
- Red Potatoes 
- Baby Carrots
- 1/2 a yellow onion, chopped in large pieces
- Salt and Pepper
- 3-4 TBS Olive Oil
What you do: 
Wash and chop your potatoes, usually into quarters. Chop the onions into large pieces. 
Next, Put the potatoes and carrots and onion in a CrockPot, drizzle with olive oil and top with salt and pepper. 

Set the crockpot to LOW and cook for about 6 HOURS. It may be longer of shorter depending on how big your vegetables are or how many there are. 

These turned out GREAT! So easy. I just cooked at the same time as my roast and VOILA!
